It is an ancient Chinese condiment, used extensively in the Chinese food that we know and have grown fond of.Dark soy sauce is thicker, darker, slightly sweeter, and less salty than light soy sauce. Due to aging with molasses or caramel, it is sweet and the addition of corn-starch makes it thick. Dark soy sauce is more preferred in Shanghai-style-cooking.
